White claw chicken

This is our play on "beer can chicken". Hard seltzers have been so popular lately, we thought why not try it out? The result was a delicious & juicy chicken!


Ingredients (serves 4)

  • 1 whole chicken

  • 1 can of lime hard seltzer

  • 2 limes

  • 1/4 cup chopped cilantro

  • 1 shallot

  • 1 jalapeno pepper

  • 1/2 cup olive oil

  • 1/2 tsp poultry seasoning

  • 1 tbsp salt

Kitchen Tools

  • Grill

  • Food processor or blender

  • Basting brush

Instructions

  1. Preheat grill to 400 deg F.

  2. Zest and juice the 2 key limes into a food processor or blender.

  3. Roughly chop the shallot, removing the skin and roots. Add to blender.

  4. Roughly chop the jalapeno, removing the stem. Add to blender.

  5. Add the cilantro, olive oil, poultry seasoning and salt to the blender. Blend until combined.

  6. Reserve ~1 cup of sauce (for basting). Pour the rest of the sauce into the chicken cavity and over the chicken skin. Rub to evenly coat.

  7. Pour 1/2 of the can of hard seltzer out (perhaps into a glass to enjoy?), then insert the can into the chicken cavity.

  8. Place the chicken on the grill, can-side down.

  9. After 1/2 hour, brush the reserved sauce on the chicken skin with a basting brush.

  10. After 1 hour, remove the chicken from the grill. Let cool for 10 minutes before enjoying!
