Tofu po' boys

Happy Meatless Monday! No one can deny the pull of a po' boy ... fried goodness in a sandwich, what could more can you ask for? We chose tofu as our protein for a fun twist, making it an easy vegan meal. Yum!


Ingredients (serves 2)

  • 1 14 oz package of extra firm tofu

  • 1 cup potato starch

  • 1 tbsp Cajun seasoning (+PRO TIP: make sure to check the ingredients of your seasoning, because they're all different. For example, if salt is listed as an ingredient, you may not need to add as much.)

  • 1 tbsp salt

  • 2 tsp cayenne pepper

  • 1 tomato

  • 1/2 head of romaine lettuce

  • Mayonnaise (or vegan mayo!)

  • Sliced dill pickles

  • 2 hoagie rolls (or whatever bread you prefer!)

  • Vegetable oil (or any neutral oil) for frying

Kitchen Tools

  • Large pot for deep frying

  • Probe thermometer

  • Frying skimmer

Instructions

  1. Preheat oil to 350 deg F in a large pot.

  2. In a medium sized bowl, mix the potato starch and spices until combined.

  3. Cut the tofu into ~2 cm cubes. Doesn't need to be exact, you just want them small enough to be bite-sized!

  4. In batches, toss the tofu cubes in the seasoning so all sides are coated.

  5. Once oil is heated, fry the tofu until the cubes are golden brown, approximately 3 minutes. The tofu will puff up slightly during frying. (+PRO TIP: fry in batches to ensure your oil doesn't cool down too much!)

  6. Using a frying skimmer, take the tofu out of the oil and let them rest on some paper towels to soak up any excess oil.

  7. Shred the lettuce (just by cutting into thin strips with a knife) and slice the tomatoes.

  8. Cut the hoagie rolls in half, and assemble your sandwiches (mayo, lettuce, tomatoes, fried tofu and pickles) and enjoy!
