Creamed spinach with artichokes

Taking two of our party favorites (creamed spinach, spinach & artichoke dip) and fusing them into one side dish! Note: steak not included.


Ingredients (serves 2)

  • 3 fresh artichokes

  • 1 lemon

  • 1/2 yellow onion

  • 10 oz fresh spinach

  • 2 oz cream cheese

  • 1/4 cup shredded mozzarella cheese

  • 1/4 cup parmesan cheese

  • 12 fl oz heavy cream

  • 2 tbsp butter

  • 2 tbsp flour

  • 1 tsp salt

  • 1 tsp garlic powder

  • 1/2 tsp black pepper

  • Large pot

  • Steamer

Instructions

  1. Cut out the artichoke hearts - see step by step instructions here. Store them in cold water with lemon to prevent them from oxidizing.

  2. Steam the artichoke hearts for ~15 minutes, until tender. Set aside to cool.

  3. Dice the onion.

  4. In a large pot over medium high heat, melt the butter. Add the diced onion into the pot, as well as the salt, pepper, and garlic powder. Stir occasionally for ~10 minutes (until onion is translucent and starts to brown).

  5. Add the flour into the pot, stirring to combine. Cook for ~2 minutes, until the flour turns a golden brown.

  6. Add the heavy cream into the pot, stirring to combine. Bring to a boil. Once boiling, reduce to a simmer.

  7. Add the spinach and cover the pot. After a few minutes, stir to mix the spinach with the cream mixture. Re-cover the pot and let steam for a few minutes, until the spinach is completely wilted.

  8. Add the mozzarella, parmesan and cream cheese to the pot, stirring to combine.

  9. Slice the artichoke hearts into thin pieces. Add the artichoke slices to the pot, stirring to combine.

  10. Serve it up in some tiny ramekins for the full fancy steakhouse effect! Enjoy!
